After being lazy on Sunday and ordering take out instead of making dinner I thought that I should prepare a nice meal on Monday.
I did not know that it would take me nearly 2 1/2 hours to prepare it.
I have a recipe for Glazed Roasted Chicken. S and I have prepared it many times on the grill. I thought I would try it in the oven instead of dealing with the grill out in the rain and cold. It's a beer can chicken recipe that ends up being like a rotisserie chicken minus the rotisserie. And the glaze that is prepared for it is to die for.
It tasted excellent along side okra and rice. Although in the future I will stick to cooking it on the grill to save a whole lot of time. I was proud of myself for preparing all by myself. Usually S cooks it on the grill and I prepare the glaze and side items. If only I should dare tackle a turkey dinner.
