We are celebrating an ex co worker's birthday. She's a retired lady in her mid 70's that used to work part time for us but was kind of forced to retire, almost a year ago, do to the fact that we didn't have anything for her to do anymore. What little stuff we saved for her to do any one of us could have easily done.
So she comes in for birthdays and holidays to visit. She always brings a cake or Rice Krispy treats. Friday is her birthday and I never let her make her own cake. She usually makes up a dish of her yummy noodles and brings them in.
She is from the Philippines and has some family here and some friends from church. Most of her family is still in the Philippines though and because of her kidney transplant she can't travel over there. So we include her in birthday celebrations and our Christmas party/gift exchange. She always has to be home to watch her soap opera at 1:00 though.
I plan on making apple crisp. I was going to make it totally by scratch but I would have to get up at the crack of dawn to peel and slice apples. I'm going to opt instead for canned apples and make the topping from scratch so I can bake it and keep it warm in a Pyrex dish before work. Then we can have warm apple crisp with ice cream---YUM!
And if you wonder why I am not making cake we have two other birthdays this month. I'm not a big cake eater anyways but will have the courtesy slice. So I thought I'd make something that was not cake. I know this person won't mind anyways, more then likely she's never had it before and will enjoy trying something new.
